This soup has been a family favorite for years. It’s a go-to for large groups or dropping off for friends after having a baby.

Cheeseburger Soup

Cheeseburger Soup

This soup is rich and delicious and just so comforting.

Ingredients

  • 1 lb ground beef
  • 4 Tbs butter, divided
  • 3/4 cup onion, chopped
  • 3/4 cup carrots, finely chopped
  • 3/4 cup celery, diced
  • 1 tsp dried basil
  • 1 tsp dried parsley flakes
  • 4 cups potatoes, cubed and peeled
  • 3 cups chicken broth
  • 1/4 cup all-purpose flour
  • 4 cups cheddar, shredded
  • 1-1/2 cups whole milk
  • 3/4 tsp salt
  • 1/4 to 1/2 tsp pepper
  • 31/4 cup sour cream

Instructions

  1. In a large saucepan over medium heat, cook and crumble beef until no longer pink, 6-8 minutes; drain and set aside.
  2. In same saucepan, melt 1 tablespoon butter over medium heat. Saute onion, carrots, celery, basil and parsley until vegetables are tender, about 10 minutes. Add potatoes, ground beef and broth; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 10-12 minutes.
  3. Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir until bubbly, 3-5 minutes. Add to soup; bring to a boil. Cook and stir 2 minutes. Reduce heat to low. Stir in cheese, milk, salt and pepper; cook until cheese melts. Remove from heat; stir in sour cream right before serving.

Notes

-I grew up having this soup and it's the favorite of so many I've made it for over the years. The original recipe calls for Velveeta which I'm personally not a huge fan of but I substituted raw cheddar and it was delicious.
